Bruno Mancha (born in Gómez Palacio, Mexico) was a former stable boy and miner who came to Birmingham in the mid-1920s. Mancha had lost an arm in a previous injury. He came to Alabama after marrying a Georgia native.

Mancha and a partner started a tamale-making business in 1926, selling them from pushcarts. The operation expanded to 10 or so carts, with several woman and Mancha's children helping prepare and roll them.

In 1963 Bruno's son John opened Mancha's restaurant in the Shepherd-Sloss Building on 20th Street South.
