William Carroll Eubank or Eubanks (born February 3, 1818 - died May 11, 1894) was the third child to be born to white settlers in Jefferson County and served as Jefferson County Sheriff from 1856 to 1859.
Eubank was the fourth of six children of Robert and Margaret Conley Eubank, early Carolina settlers at Jonesboro. Eubank and James Brown sold land to Enoch Ensley which later became the city of Ensley. Eubank and his wife, Elizabeth Jane Hickman Eubank, had nine children, Robert P., James T., William J., Alfred, John H., Margaret C., Alice, George, and Joseph.
