Wing Soon Joe (born August 29, 1916 in Guangzhou, China; died June 24, 1987 in Birmingham) was a second-generation owner of Joy Young Restaurant.

Joe was the son of Daiho Mansion. He had five children, George, Henry, Jim, John and Suelin, who all grew up working in the restaurant. In some contexts, Joe's name was rendered differently, as "Joe W. Soon".

Joe died in 1987 and is buried at Elmwood Cemetery.
