Wing Soon Joe (born Joe Wing Soon August 29, 1916 in Canton (Guangzhou), China; died June 24, 1987 in Birmingham) was a 2nd generation owner of Joy Young Restaurant.
Joe was the son of Joe Mansion and his wife Lee. He spend his childhood in China while his father established a restaurant with his partners in Birmingham. He immigrated as a teenager in 1931 and worked in the restaurant for the rest of his life.
Joe served in the U.S. Army during World War II. He took over his father's share of Joy Young after his death in 1954.
Joe and his wife had five children: Henry, Suelin, George, John, and Jimmy. Henry took over the restaurant in the 1970s.
