Jimmy Graphos (born November 15, 1941; died March 15, 2016 in Birmingham) was a former partner in Sneaky Pete's and owner of Jimmy's Hot Dogs.

Graphos graduated from Phillips High School in 1960 and began working with his uncle, John Collins, at Lyric Hot Dogs. In 1973 he joined his older brother, Pete and his twin brother, Sam at Sneaky Pete's just as they began franchising the concept. Jimmy opened his store at 3425 6th Avenue South in Lakeview and trained new operators and their employees as the chain expanded from two to twenty-three locations. The Graphoses sold the chain in 1986 and Jimmy, like Sam, renamed his store and continued operating it independently as Jimmy's Hot Dogs and Burgers.
