Eat at Panoptic is a catering company and food truck founded and operated by chef Raquel Ervin.

Ervin launched her catering business in 2014. The Panoptic Food Truck business was launched at an event at The Avondale on July 3 and established regular service from Smokey's Pit Stop at 2709 Crestwood Boulevard in Irondale.

In October 2020 Ervin leased the former Green Acres Cafe at 1819 Crestwood Boulevard for the business' first brick-and-mortar location. The new location opened on May 1, 2021.
